TRICOLOR QUINOA MEATBALLS WITH 5 CHEESE CREAM

INGREDIENTS FOR 4 PEOPLE

200g tricolor quinoa
1 pack of Calzetti with 5 cheeses cream
2 potatoes
2 carrots
1 egg
100g grated
Parmesan cheese
Extra virgin olive oil
Salt to taste.
Pepper as needed.
Bread crumbs

Preparation:

First, let’s wash the quinoa very well: I used a fine mesh colander dipped in a bowl full of water and changed the water several times. Then we cook the quinoa as indicated on the package. Meanwhile, peel and wash the potatoes and carrots well and grate them with a grater with large holes, pass them in a pan with a drizzle of oil for about 10 minutes, season with salt and pepper and let them cool.

In a bowl put the cooked quinoa, the vegetables, the parmesan, the egg and season with salt and pepper. If the mixture is too soft you can add breadcrumbs until you have the right consistency.

We form balls with our hands, form a small basin in the middle where we will put a teaspoon of 5 cheese cream. Close the meatball and pass it in breadcrumbs. We continue to form meatballs until the mixture is finished.

We oil a baking dish and place the meatballs. Grease them with oil and put in the oven at 180 for about 20 minutes.
