En una cacerola grande verter la chalota cortada en dados peque\u00f1os con el aceite de oliva virgen extra, dorar el arroz y dejar tostar unos 3 minutos. Una vez tostado el arroz, desglasar con el vino blanco hasta que se evapore el alcohol, luego a\u00f1adir el caldo de verduras caliente, cazo a cazo. 10 minutos despu\u00e9s de la cocci\u00f3n, vierte la mitad del pur\u00e9 de remolacha. Salar el risotto y seguir cocinando 5 minutos m\u00e1s, a\u00f1adiendo siempre el caldo si es necesario. En una sart\u00e9n aparte, dorar la mota cortada en tiras finas. Cuando est\u00e9 cocido, agregue el pur\u00e9 de remolacha restante.
