Pasta sicilian style

Ingredients for 4 people:
- 400 gr pasta , “small penne” type
- 2 small aubergines
- 200 gr fresh mushrooms
- 300 gr ripe firm tomatoes
- 1 clove of garlic
- some fresh parsley
- 3 tblsp. extra virgin olive oil
- 2 tblsp. grated Cream of pecorino cheese “Calzetti”
- salt and pepper

 

 

 

Preparation:
Wash and cut the aubergines in dices . Cut away the bottom of the mushrooms,wash them and cut into small slices. Let the tomatoes rest for 1 minute into boiling water, throw the seeds away and cut into small pieces.In a pan,with extra vergin olive oil, let the smashed garlic fade,add the aubergines and let them cook under brisk flame, mixing frequently till they turn lightly brown. Add the mushrooms and cook for other 2-3 minutes. Take the aubergines and mushrooms away and cook in the same pan for abt. 15 minutes the tomatoes with salt and pepper .Add then the previously prepared aubergines and mushrooms and cook for other 5 minutes. Garnish with chopped parsley before fire is off . Boil pasta in lot of salted water till it is still firm , season with aubergines and mushrooms sauce and cover with cream of pecorino cheese “Calzetti”.
